DELICIOUS APPLE CAKE RECIPE

A cake recipe again. I know. But...
We had our Christmas party in our local toddler group yesterday. And our snowman cake what was decorated by my 3 years old daughter was so popular that a lot of mums asked me for the recipe. And it is just easier to post it here than sending out to everyone. ... and 50 % of the cake is fruit...



This was the last toddler club party of the year yesterday, and it was brilliant. My little ones loved the big Christmas tree and they were a bit frightened by Father Christmas. However my toddler seemed rather to be excited about the idea that she had had a chance to order her Peppa pig toy directly from Father Christmas.

Regarding the cake, I have to admit that I chose this recipe because I did not have time to create a complicated cake. I think this the easiest cake on the whole world and I am really grateful to my friend Anne, that she shared this with me years ago.

Basically this is a traditional German Apple cake, I just upgraded it a little bit and used orange instead of lemon what gave a christmassy taste to the cake.

Apple cake


Ingredients:

(for a small 20 cm cake tin, using a 24 cm cake tin, just double the amount of ingredients below. This time I used our silicon snowman mold, what needs just this quantity)

125 g butter - room temperature 
125 g caster sugar
2 eggs
A pinch of salt
Zest and juice of 1 orange (or lemon)
200g plain flour
2 tsp baking powder
2 tbsp milk 
3 big Bramley apple or 5 normal size green apples - peeled and diced into 1.5 cm cubes


  1. Preheat the oven to 175-180 C.
  2. Peel , core and dice the apples and pour over the juice of the orange.
  3. Mix butter and sugar until it is pale and fluffy, then add the eggs, salt and orange zest, and mix again.
  4. Sift the flour and baking powder into the mixture and adding the milk mix it until it is combined. 
  5. Add the apples and pour the dough into the baking tin. You should have a very thick dough so you need to make sure that the cake is evenly distributed within the tin. 
And that's it. It goes into the oven for 35 minutes ( using the bigger baking tin 40-50 minutes).
Leave the cake to cool down a little bit in the tin ( about 10) then you can transfer it to a wire rack.

You can stop here. Sifting a little icing sugar on the top of the cake - despite it's modest appearance, - you will get a delicious cake for tea.

Alternatively you can mix icing sugar and juice of one orange and drizzle it on the cake and just scattering a little orange zest on top you will get a decorative party cake.

But we wanted a snowman, so we did not stop here. As I mentioned this time we used a snowman silicon mold so result was a naked snowman. For the decoration  we used white chocolate cream and desiccated coconut.

100g white chocolate
2 heaped tbs sour cream or cream fraiche
About a handful of desiccated coconut
Orange zest to create the snowman's nose
And chocolate buttons for eyes and buttons

Melt the chocolate in a glass bowl over steam, but do not let it get too hot. As soon as the chocolate melted remove the bowl from the heat and add the sour cream. Mix it until you get a creamy shiny mixture. Using a spatula cover the cake with a thin layer or this cream and scatter all over the desiccated coconut. We used grated dark chocolate to cover the hat of the snowman. And now the nose and eyes can be added, just use your creativity or leave your kids to take charge of this.
